I got into making chiffon cake after tasting my friend's cake. After several attempts, I finally realized the baking pan was the culprit of my failures. Thanks to Amazon's return policy, I started experimenting with different design and material and finally found this product. I can safely say this is the end of my chiffon cake baking pan search. It comes with both the fluted and flat removable base and both are absolutely flat. I have tried the fluted one and the result was so remarkable I had to rush here to write a rave review. I have finally proved to myself that there is nothing wrong with my receipe and most previous failed attempted were all due to bakeware using non-stick material. This is the first chiffon cake I have baked that managed to climd all the way beyond the 5" wall. And thanks to the fluted design, turning the cake up side down was a piece of cake (no pun intended) by using a wine bottle. All in all, this product is a must have if you are into chiffon cake making. Disclaimer: this product doesn't work too well with Japanese Cotton Cheese Cake since the receipe requires water bath and the water is very likely to manage to seep in the bottom.

So this is a 7" (vs, 10") pan. This is great for individual or at least smaller cakes. This is the smooth or chiffon variety instead of the curved with ridges. These are great for pull-apart bread and other styles.

I ordered the 7-inch pan, and I don't see that in the listing any more, but the material would be the same for all sizes I'm sure. It's really nice, heavyweight aluminum with a smooth surface that doesn't seem to have a coating, but it is non-stick. How do they do that? It's excellent quality, one of the nicest pans I've had. I love how you get a choice of bottom, so if you don't want a hole in the cake, you can use the solid bottom and it's a nice deep cake pan. Beautiful stuff, I would order a full size one from these folks. The small ones are probably great too, I'll be ordering those soon.

I ordered this to use in a 6-qt Instant Pot pressure cooker, and it's just the right size for that use. The very good: It has two removable bottoms--one flat circular one and one flat circular one with a vertical tube. It fits in an Instant Pot. It seems to be well made for the price point. The not-quite-as-good: It is made of aluminum, and I prefer stainless-steel bakeware.
